“Passofonduto” is a place, a land, a house, and the beating heart of a project born in 2014. Set in Platani Valley, along the border of Agrigento and Caltanissetta provinces, this chalky – sulfur-rich area of Sicily, is surrounded by large chalky rocks, wooded areas, aromatic and spontaneous grasses, vegetable gardens, cereals, olive groves, almond, and fruit trees.The desire to express myself and my freedom led to me producing wine in C.da Passofonduto, located above a hill around Platani River. A long walk lasting for 10 years: a preparatory path using my bare hands into the ground where I experimented with emotions, mixtures, and vinifications, they led to plant grapevine searching for the perfect harmony between environment, soil, raising, grape variety, and man.
Selection of 80% Nero D’avola grapes and other 20% native white grapes varieties of Passofonduto and Torre del Salto d’Angio’ district, assembled to offer a global idea about the territory. Grapes are destemmed and fermented in small wine vessels with maceration on the skins depending on the Cuvèe variation period, from one to three days.
